Chicken Roast!!

Every once in a while, I crave for Nepali style chicken roast; especially the ones they carry in Nepali wedding. Ah i miss home :(. Since, I do not get to attend as many Nepali weddings here in the United States and also so far none has served my beloved Chicken Roast, I had to learn it by my own. Prep time: 1 hr  Cook time: 1 hr Total time: 2 hrs

Things you will need:

  • Fresh Chicken breast: 2 lbs
  • 1 egg
  • 2 table spoons cumin-corriander powder
  • 1 table spoon chicken curry masala
  • Salt (according to your taste)
  • 1 table spoon red chili powder
  • 3 table spoon corn flour
  • 1 table spoon all purpose flour
  • 3-4 cups oil
  • 2 tea spoons turmeric
  • 2 table spoons ginger-garlic paste
  • 1 table spoon soy sauce
  • 3 table spoon lime juice 
Direction: 
  1. Cut chicken breast in small cubes. Add all of the above mentioned ingredients EXCEPT oil and give everything a good mix. 
  2. Cover the mixture with a clear plastic foil or a plate and put it aside for an hour. 
  3. After an hour, heat the oil and fry chicken in a medium heat (this is very important, make sure to fry chicken slowly). 
  4. Take out chicken when it is red and crispy in consistency. 
  5. Eat :) Serve it with ketchup or any kind of chutney.
