Easy Dashain/Bhai tika Gift idea : Chocolate truffles :)

Writing a blog post from Nepal =)) As I said in my post earlier, I am still immature when it comes to baking. And that is why I always opt for easy ones. Every once in a while I crave for chocolates and there is no reason for me to buy all those fancy looking expensive chocolates if I can make one. The following recipe is so simple and makes a great gift in every occasions. So, do not buy, instead make one and make your loved ones and yourself special ;;)

Prep time: 20min(s) Cook time: 1 hr(s) Total time: 1hr 20min(s)

Things you will need:
* Oreo Cookies (1 Packet)
* Cream Cheese (1, 8 ounces)
* Semi-Sweet Chocolate (3 packet)
* Shredded Coconut (2 table spoon)

Directions:
1. Finely mash cookies with your hand (I used a heavy dish) or grind it on a food processor.
2. Microwave cream cheese until it melts and mix it in the mashed cookie.
3. Mix everything well and make small rounds. You do not have to be perfect; just make whatever shapes/ sizes you want.
4. Refrigerate the balls for around 10-15 minutes.
5. In the meanwhile, melt chocolate in the microwave for 2 minutes ( chocolates burn really fast so be careful)
6. Dip cookie balls in the melted chocolate and put it on a plate covered with aluminum sheet. Also, sprinkle the shredded coconut on wet chocolate balls.
7. Refrigerate it for 1 hour and relish the smoothness afterwards :)

Friday Treat: Easy Stuffed Bell Peppers!!

Whenever I see colorful bell peppers in stores, I cannot stop myself from purchasing them. Most of the time, I end up making curry out of it but this time I wanted to make something else. Something simple, quick yet tasty! For that, I thought about stuffing peppers and giving them a slight broil. I used foods that were in the refrigerator for a while and of which I had no idea on what to do with. This way, I was able to take care of leftovers (Rice, Beans, and pre-cooked chicken) and at the same time treat my Friday with delicious Stuffed Bell Peppers. I must also mention, this is the simplest recipe I have ever made and of course one of the tastiest \:D/

Things you will need:

  • Bell Peppers (3, halved and seeds removed)
  • Boiled Rice (1 cup)
  • Pre-cooked Chicken (1 cup, finely chopped)
  • Pre-cooked Beans (1 cup)
  • Salt (according to taste)
  • Red Chili Powder (1/2 table spoon)
  • Chicken Curry Masala (1 table spoon)
  • Green Chili (1-2, finely chopped)
  • Oil (3 table spoons)
  • Onion (1, medium, finely chopped)
  • Cheese (1/2 cup in total)       
Directions:
  1. Start by preheating the oven in 350 degrees Fahrenheit for 20 minutes.
  2. On a deep dish, add water and salt and let it shimmer. Add bell peppers and cover and cook for 8-10 minutes on a small heat.
  3. In the meantime, heat oil and add onion, green chilies and fry it until golden brown.
  4. Add beans, rice and all of the above mentioned ingredients except cheese and Bell Peppers.
  5. Cook the mixture for 10 minutes. Make sure to cover and stir periodically. 
  6. Now, we are ready for stuffing. Drain excess water from peppers and stuff the beans and rice mixture.
  7. Broil stuffed peppers for 10 minutes. Turn off the oven and add cheese on peppers and close the oven door for a minute.
  8. Ready!! Its all yours ;)) 
Note: You can grill stuffed peppers if you want.
