Badam Sadeko (Spicy Peanut Salad/Salsa) Recipe!!

I make Bhatmas Sadeko (Recipe Here)  at least once a week. I love it so much and is my favorite food! I also made Gundruk and Bhatmas Sadeko  (Recipe Here) and my first try came out be really good and was well appreciated by my readers. So, keeping in mind, the popularity of our popular Nepali snacks, today I decided to go little bit beyond the comfort zone and make Badam Sadeko. Just like Bhatmas Sadeko, it is super easy to prepare and requires similar ingredients. Also, taste wise it is amazing and is in my favorite list already :) Here you go guys, enjoy this easy yet extremely yummy Badam Sadeko Recipe.

Things you will need:
  • 2 cups Peanuts ( I used prepackaged one. If you want roast the regular raw peanuts and make sure to be extremely careful and stir often times as you roast it)
  • 1 table spoon of oil
  • Garlic (4 cloves, thinly sliced)
  • Ginger (2 table spoons, Thinly sliced)
  • 2 tea spoon red chili powder
  • 1 table spoon lime juice
  • Half Tomato (Finely chopped)
  • Ginger-Garlic Paste: 1 Tablespoon
  • Chat Masala (1/2 table spoon)
  • 1 Serrano Pepper (finely chopped) 
  • Salt (according to taste)
  • 1/4 red onion (finely chopped)
  • 1 strand of green onion (finely chopped)
  • Cilantro (1/2 cup, finely chopped)
Direction: 
  1. On a large place peanuts first.
  2. Add tomato, Serrano, chopped cilantro, green and red onion, ginger-garlic chopped and paste in a bowl to make the mixture.
  3. Add spices (salt, chat masala, red chili powder, lime juice,oil) and give everything a good mix.
  4. Done!! Enjoy :-D

Shrimp Coconut Curry Recipe!!

Shrimp probably is my favorite in fish. I love it in salads and wraps. Most of the time, I boil shrimp and simply mix it with other greens and make a salad. But today I wanted to try something different and therefore decided to make Shrimp curry. As I was playing with different spices, I ended up using coconut milk and the combination of everything came out to be Shrimp Coconut Curry. I was extremely pleased by the results since it was my first time making curry of shrimp and I had never even tried something like this before. Posting recipes has definitely enhanced my cooking skills day by day. Things you will need:
  • Tailless Large Shrimp (1 packet or 3 cups, cleaned thoroughly)
  • Onion (1, medium size, finely sliced)
  • Red Dried Chilies (2-4)
  • Cumin Seeds (1 tea spoons)
  • Tomatoes (2 medium size, finely chopped)
  • Fennel Seeds (1 tea spoons)
  • Oil (4 table spoons)
  • Coconut Milk (1/2 cup)
  • Turmeric powder (1/2 tea spoons)
  • Red Chili powder (1/2 table spoon)
  • Cumin-coriander powder (1 table spoons)
  • Meat Masala (1 table spoon, any kind)
  • Salt (According to taste)
  • Ginger-garlic paste (1 table spoon)
  • Water (1 cup)
Directions:
  1. Heat oil and add red chilies, cumin and fennel seeds. Fry until seeds become brownish black.
  2. Add onion and cook until golden brown. Make sure to stir periodically.
  3. Add tomatoes, ginger-garlic paste, salt, turmeric, cumin-coriander, red chili and meat masala powder.
  4. Stir, cover and cook on a medium heat for 5 minutes. Make sure to stir periodically.
  5. Add coconut milk and water. Stir the mixture 1-2 times and add shrimp. Slowly stir again.
  6. Cover and cook on a medium heat for another 5 minutes. Do not Stir this time.
  7. Done!! Serve with white steamed rice :) Too simple isn't it ?
