- Eggs (3-4)
- Fenugreek Seeds (1 tea spoon)
- Himalayan Onion/Jimbu (1table spoon, OPTIONAL)
- Bhatmas/ Dried Soybeans (1/2 cup)
- Salt (according to taste)
- Turmeric Powder (1 tea spoon)
- Red Chili Powder (1/2 table spoon)
- Garlic (5-7 peeled and thinly sliced)
- Cumin Seeds (1 tea spoon)
- Black Mustard (1/2 table spoon)
- Cumin-Coriander Powder (1/2 table spoon)
- Oil (2 table spoons)
- Water (2 cups)
- Timur Powder (1/2 table spoon)
Directions:
- Heat oil and fry himalayan onion, fenugreek, cumin, and black mustard seeds until brownish black.
- Add soybeans and garlic. Fry for 1-2 minutes.
- Add eggs and all of the remaining ingredients except water. Stir well, cover and cook for 4 minutes.
- Add water and cook the mixture on a medium heat for another 5 minutes.
- Done!! Server hot with rice or chapati :)
