When I saw raw papaya in the Asian Grocery store yesterday, I was literally jumping because its been years since I hadn't had my favorite achar. This particular achar goes really with simple rice and black lentil or with any regular Nepali Meal (recipe here). Also, need not to mention, this recipe is super easy and effortless to prepare. Here you go guys my favorite and so can be yours, the Shredded Raw Papaya Salad (Mewa ko Achar) Recipe :x

Things you will need:
- Raw Papaya (1 medium size)
- Serrano Pepper (2, finely chopped)
- Salt (according to taste)
- Turmeric powder (1/2 tea spoon)
- Mustard powder (1/2 table spoon, grind fresh black mustard)
- Sesame powder (1 table spoon, roast and grind into fine powder)
- Red Chili powder (1/2 table spoon)
- Fenugreek seeds (1/2 tea spoon)
- Oil (2 table spoons)
- Lime Juice (2 table spoons)
Directions:
- Papaya: Peel, cut in large chunks, take out seeds and clean with fresh water.
- Shred Papaya with whatever consistency you would like (Refer to the second picture for example).
- On a large bowl, add papaya, salt, Serrano pepper, turmeric, sesame, red chili, and mustard powder.
- Heat oil and add fenugreek seeds. Cook until seeds become brownish black.
- Carefully pour the oil over ingredients in the bowl.
- Add lime juice and give everything a good mix.

I prefer vegetables over meat and out of so many to choose from, Eggplant definitely is my favorite. I know two different ways of cooking eggplant. One is the curry form which I already have a recipe of (click here) and another is pan fried version. This particular one especially goes really well with simple steamed rice and lentil (dal). And need not to mention, it is super easy to prepare at the same time. Without further due, below is the detail process to make the super yummy and simple Pan Fried Eggplant :)

Things you will need:
- Baby Eggplant (7-10, halved; any kind of eggplant should be equally good. Just make sure to cut thick slices)
- Mustard Seeds (2 tea spoons)
- Cumin Seeds (1 tea spoon)
- Fenugreek Seeds (1 tea spoon)
- Oil (4 table spoons)
- Salt (according to taste)
- Turmeric Powder (1 tea spoon)
- Cumin-Coriander powder (1 table spoon)
- Red Chili Powder (1/2 table spoon)
- Ginger (2 table spoon, thinly sliced)
- Garlic (3-4 cloves, thinly sliced)
- Lime Juice (2 table spoons)
Directions:
- Heat oil and fry fenugreek, cumin, and mustard seeds until brownish black.
- Add ginger and garlic slices and fry until golden brown.
- Add eggplant and all of the remaining ingredients including lime juice.
- On a medium heat, stir, cover and cook until eggplant look slightly red and crispy. Note: be extremely gentle while stirring).

A while back I had posted a picture of Aloo-Kakra Achar on instagram. Some of you had requested the recipe. Now that I am almost done moving into a new place and kinda settled, i thought about making this achar for you guys :) Also, I make this achar often and love the authentic taste. This used to be a must have in festive/occasions back home and is super easy to prepare. Here you go guys treat yourself with this amazing Aloo Kakra ko Achar :x

Things you will need:
- Potato (1 large, boiled/microwaved and cut it in cube sizes)
- Onion (1 small, finely sliced)
- Green chilies (2-3, finely chopped)
- Cucumber (1 thinly diced)
- Red chili powder ( 1 table spoon)
- Cumin-Coriander powder (1/2 table spoon)
- Turmeric powder (2 tea spoons)
- Salt (according to your taste)
- Fenugreek seeds (1 tea spoon)
- Lime juice (2-3 table spoons)
Directions:
- On a large bowl place the vegetables and add all of the above mentioned spices except oil, water, fenugreek and sesame.
- Roast sesame seeds until golden brown and ground it until it becomes powder like consistency.
- Add ground sesame on top of everything.
- Heat oil and fry fenugreek seeds until brownish black and pour it over the vegetables and spices.
- Add lime juice and give everything a good mix. Also add water and mix to give achar good texture .
